Chuck Furuya MS is Hawai‘i’s most sought-after wine expert, and mentor to countless sommeliers and wine professionals. He is currently a partner with star chef D.K. Kodama and DK Restaurants, which includes all four Sansei Seafood Restaurant & Sushi Bar locations on O’ahu, Maui and Hawai’i Island, VINO (Honolulu), and d.k Steak House in Waikīkī. The group will open its first Mainland U.S. venture in 2016, Sansei Seafood Restaurant & Sushi Bar Seattle.
Mr. Furuya passed the rigorous Master Sommelier examination in 1989; at the time, the 10th American awarded this prestigious title. Prior to joining DK Restaurants in 2000, Furuya managed La Mer restaurant at the Halekūlani Hotel and Bagwell’s 2424, formerly at the Hyatt Waikīkī. Earlier in his career, he served as Wine Cellar Master at the Kahala Hilton (currently the Kahala Resort & Spa) for many years.
Mr. Furuya has also played a pivotal role in the evolution of Hawai`i Regional Cuisine. He created the pairings and wrote the wine introduction for the first Hawai‘i Regional Cuisine cookbook, “The New Cuisine of Hawai‘i,” and also created the wine pairings for the PBS television show, “Hawai’i Cooks with Roy Yamaguchi.” He is the former Chairman of Education for the American Chapter of the Court of Master Sommeliers, and writes a monthly wine column for the Honolulu Star-Advertiser.
