Seminar DescriptionWe will take a look at Mexico's spirits, Tequila/Mezcal/Bacanora/Sotol/Raicilla and how production and most importantly, terroir play a role in the uniqueness of each spirit. Agave takes 5-20 years before it is ready for harvest. The plants life takes on a sense of place which cannot be compared with any other spirit. I will have a panel of Tequila and Mezcal producers, Agave educators and brand owners. Attendees will learn what the difference is between the many agave spirits. They will gain a better understanding of the spirituality of agave. Compare agave to wine and learn about how the terroir defines the spirit. I hope to see more restaurants put more of a focus in Agave spirits and list them as you would a wine list. It truly is a wine.
